I made some changes to the original, and this is now a firm family favourite. It’s quick, easy and versatile, and you can make it paleo / keto by making a small change to the crust.

Serve with a side salad.

Bacon Quiche

Quick and easy to make, and super versatile – simply replace the quiche with your favourite combo of vegetables, chicken, ham, etc.

  • food processor

Ingredients
  

Pastry

  • 1 cup flour
  • 250 g butter
  • 1 cup grated cheese

Filling

  • ½ onion (chopped)
  • 500 g bacon (chopped)
  • 1 clove garlic (chopped)
  • 2 eggs
  • 125 ml milk
  • 1 cup grated cheese
  • 1 tsp baking powder
  • 5 ml salt & pepper
  • 1 sprig thyme (stripped)

Instructions
 

PASTRY

  • Mix the ingredients together (I just blitz everything in the food processor), and press into a greased pie dish.

FILLING

  • Preheat oven to 190°C.
  • Fry the onion, bacon and garlic. Spoon over pastry, and spread evenly.
  • Mix eggs, cheese, milk, and dry ingredients. Pour liquid mix over bacon mix.
  • Optional: sprinkle additional fried onion on top.
  • Bake for 30 – 35 minutes.
