A delicious salad that is perfect for any kind of weather, and can be eaten as a main meal or a side dish.


  • 100g Couscous (the box says that serves two, but it was enough for all of us)
  • Your fave mixed greens, finely chopped (spinach, kale, beet leaves, chives – we just grab handfuls of greens from our garden)
  • About 1/2 cucumber, chopped
  • 1/2 red onion, finely chopped
  • 1 stalk celery, chopped
  • 2 roasted pears (cut into thin slices and roast in the oven, then cut into smaller strips when done)
  • 1 chopped avo
  • Chopped biltong (I use a lot, but optional if you’re meat-free)
  • Crumbed feta
  • Crumbed blue cheese
  • Salt & pepper for seasoning
  • Chopped mint (optional)

Dressing – mix together:

  • 2 tbsp honey
  • 2 tbsp mustard
  • the juice of one lemon

Mix all the salad ingredients together, and add the dressing before serving.
